A tasty soup that has both the smoky taste of bacon and the sweetness of green peas. It's perfect for a warm meal on a cold day.
Ingredients:
- 4 slices bacon, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups frozen green peas
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup heavy cream
- Chopped parsley for garnish
Instructions:
In a large pot, cook diced bacon over medium heat until crisp
Remove bacon and set aside, leaving the drippings in the pot
Add chopped onion to the pot and cook until softened, about 5 minutes
Stir in minced garlic and cook for another minute
Pour in chicken broth and bring to a simmer
Add frozen green peas and dried thyme
Season with salt and pepper to taste
Simmer for about 10-15 minutes until peas are tender
Using an immersion blender, blend the soup until smooth
Stir in heavy cream and cooked bacon
Simmer for an additional 5 minutes
Serve hot, garnished with chopped parsley
