Pressure Cooker Corned Beef & Cabbage



A quick and easy recipe for perfectly cooked corned beef and cabbage in a pressure cooker. Tender meat and flavorful vegetables make for a hearty and satisfying meal.

Ingredients:

  • 3 lbs corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 3 bay leaves
  • 6 medium potatoes, quartered
  • 6 carrots, peeled and cut into chunks
  • 1 small cabbage, cut into wedges
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions:

After running cold water over the corned beef, put it in the pressure cooker

In a pressure cooker, put in the bay leaves, black peppercorns, mustard seeds, coriander seeds, and onion

Add the beef broth and make sure that most of the ingredients are covered

Set the pressure cooker to high pressure for 90 minutes and close the lid

When it's done, manually let the pressure go out and open the cooker

The pressure cooker should now have potatoes, carrots, and cabbage in it

Put the lid back on the pressure cooker and cook for 5 more minutes on high pressure

Open the cooker and let the pressure out by hand

Add pepper and salt to taste

Cut the corned beef into thin slices and serve it with the fries
