These low-carb snickerdoodle cookies are a tasty treat that is good for people on the keto diet. These are great for satisfying your sweet tooth while staying on a low-carb diet because they are made with almond flour and erythritol as a sweetener.
Ingredients:
- 2 cups almond flour
- 1/3 cup granulated erythritol sweetener
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp granulated erythritol sweetener for coating
- 1 tsp ground cinnamon for coating
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a mixing bowl, combine almond flour, 1/3 cup sweetener, baking powder, 1/2 tsp cinnamon, and salt
Add melted butter, egg, and vanilla extract to the dry ingredients
Mix until a dough forms
In a small bowl, mix 2 tbsp sweetener and 1 tsp cinnamon for coating
Form dough into small balls and roll each ball in the cinnamon-sweetener mixture
Place coated dough balls onto the prepared baking sheet, spacing them apart
Flatten each dough ball slightly with the back of a spoon or fork
Bake for 10-12 minutes or until edges are golden brown
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
