Ingredients:
- 500g gnocchi
- 2 tablespoons olive oil
- 400g canned diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried chili flakes
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- Grated parmesan cheese, for serving
Instructions:
Preheat the oven to 220C 425F
Spread the gnocchi on a baking tray lined with parchment paper
Drizzle with 1 tablespoon of olive oil and toss to coat evenly
Roast in the preheated oven for 20-25 minutes or until golden and crispy
While the gnocchi is roasting, prepare the chili tomato sauce
In a saucepan, heat the remaining olive oil over medium heat
Add the minced garlic and chili flakes, and cook for 1-2 minutes until fragrant
Stir in the canned diced tomatoes and season with salt and pepper
Simmer the sauce for 10-15 minutes, stirring occasionally, until thickened
Once the gnocchi is roasted, transfer it to a serving dish and pour the chili tomato sauce over it
Garnish with fresh basil leaves and serve hot with grated parmesan cheese
