Roasted Gnocchi with Chili Tomato Sauce Donna Hay



This recipe combines the comfort of gnocchi with the zesty kick of a homemade chili tomato sauce. Roasting the gnocchi adds a delightful crispiness, while the sauce brings a punch of flavor. It's a simple yet satisfying dish perfect for any day of the week.

Ingredients:

  • 500g gnocchi
  • 2 tablespoons olive oil
  • 400g canned diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried chili flakes
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Grated parmesan cheese, for serving

Instructions:

Preheat the oven to 220C 425F

Spread the gnocchi on a baking tray lined with parchment paper

Drizzle with 1 tablespoon of olive oil and toss to coat evenly

Roast in the preheated oven for 20-25 minutes or until golden and crispy

While the gnocchi is roasting, prepare the chili tomato sauce

In a saucepan, heat the remaining olive oil over medium heat

Add the minced garlic and chili flakes, and cook for 1-2 minutes until fragrant

Stir in the canned diced tomatoes and season with salt and pepper

Simmer the sauce for 10-15 minutes, stirring occasionally, until thickened

Once the gnocchi is roasted, transfer it to a serving dish and pour the chili tomato sauce over it

Garnish with fresh basil leaves and serve hot with grated parmesan cheese
