Healthy Oatmeal Pancakes



These Healthy Oatmeal Pancakes are a tasty and healthy way to start the day. They taste great and are made with whole grains, flaxseed, and applesauce to add fiber. Enjoy a treat in the morning without feeling bad!

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 tablespoon ground flaxseed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • Cooking spray for the griddle

Instructions:

In a blender or food processor, blend the rolled oats until they become a fine oat flour

In a mixing bowl, combine the oat flour, whole wheat flour, ground flaxseed, baking powder, baking soda, and salt

In a separate bowl, whisk together buttermilk, applesauce, egg, honey, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; a few lumps are okay

Preheat a griddle or non-stick skillet over medium heat and lightly coat it with cooking spray

Pour 1/4 cup portions of the batter onto the griddle and spread them into circles using the back of a spoon

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Serve the oatmeal pancakes hot with your favorite toppings, such as fresh berries, Greek yogurt, or a drizzle of maple syrup
