This Warm Asparagus and Tomato Salad is a delightful combination of roasted asparagus, juicy cherry tomatoes, and a sweet balsamic dressing. It's a perfect side dish or a light meal on its own, and the flavors come together beautifully to create a vibrant and tasty salad.
Ingredients:
- 1 bunch of fresh asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted pine nuts
- Fresh basil leaves for garnish
Instructions:
Preheat your oven to 400F 200C
Place the trimmed asparagus and cherry tomatoes on a baking sheet
Drizzle with olive oil, sprinkle minced garlic, and season with salt and pepper
Toss to coat
Roast in the preheated oven for 15-20 minutes or until the asparagus is tender and slightly crispy
While the vegetables roast, prepare the dressing by mixing balsamic vinegar and honey in a small bowl
Set aside
Once the asparagus and tomatoes are done, remove them from the oven and let them cool slightly
In a large bowl, combine the mixed greens with the roasted vegetables
Drizzle the dressing over the salad and toss to coat evenly
Sprinkle crumbled feta cheese and toasted pine nuts over the top
Garnish with fresh basil leaves
