Mushroom Spinach Stuffed Pasta Bake



Mushroom Spinach Stuffed Pasta Bake is a tasty and comforting dish made with big pasta shells filled with ricotta cheese, sauted mushrooms, and fresh spinach. The dish is then baked in marinara sauce and topped with melted mozzarella. It's great for a hearty family dinner or a dish that everyone at a potluck will enjoy.

Ingredients:

  • 12 oz jumbo pasta shells
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, chopped
  • 6 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions:

Preheat oven to 375F 190C

Cook pasta shells according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add onions and garlic, saut until softened

Add mushrooms and cook until they release their moisture and start to brown

Add spinach and cook until wilted

Remove from heat and let cool slightly

In a large bowl, mix together ricotta cheese, Parmesan cheese, mozzarella cheese, egg, salt, and pepper

Stir in the mushroom and spinach mixture

Spread marinara sauce evenly on the bottom of a 9x13-inch baking dish

Fill each cooked pasta shell with the cheese and vegetable mixture and place them in the baking dish

Cover the dish with foil and bake for 25 minutes

Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and slightly browned
